3 Easy Summer Recipes

It's summertime and — as the saying goes — the living is easy. Or at least it will be with the help of Matt & Steve’s

A pickled bean with a big crunch and bold flavour, the Extreme Bean is our go-to ingredient to make fast and easy appetizers for any occasion. Enjoy it in a Caesar and also in your favourite recipes (but we like eating it right out of the jar!).  

Sizzle the scene, slice the greens and serve up Extreme Bean with these three easy recipes.

Extreme Bean Fiesta Bean Salad

Ingredients: The Extreme Bean Hot & Spicy, Black Beans, Kidney Beans, Corn Kernels, Red Bell Peppers, Red Onion, Heirloon Tomates, Olive Oil, Extreme Bean Brine, Lime Juice, Avocado, Cilantro

Prep Time: 5 - 7 min


1. In a mixing bowl add rinsed black beans and kidney beans

2. Cook the corn and slice off kernels and add to mixing bowl

3. Chop bell peppers, heirloom tomatoes and Extreme Beans and add to mixing bowl

4. Finely chop red onion and cilantro and add to mixing bowl

5. Add olive oil, a few splashes of Extreme Bean brine, a pinch of sea salt and lime juice to mixing bowl

6. Mix all ingredients together and let chill

7. After chilling bowl chop avocados and add to mix

8. Add cilantro as garnish if needed

Preparation: Serve in a big bowl for easy sharing

Extreme Bean Deviled Eggs

Ingredients: The Extreme Bean Garlic & Dill, Hard boiled eggs, Bacon bits, Mayonasie , Red onion, Olive Oil, Extreme Bean Brine

Prep Time: 6 min


1. Boil eggs until hard, shell, slice in half and remove yolk

2. Cook bacon and ­finely chop and add to mixing bowl along with diced up yolk

3. Add Mayonasie, finely chopped red onion and Extreme Bean to mixing bowl

4. Add splash of Extreme Bean Brine ,dash of sea salt and olive oil and mix together

5. Scoop out mix into sliced egg halves and garnish with chopped Extreme Bean

Preparation: Serve on a serving tray or cutting board

Extreme Bean Bruschetta

Ingredients: Small Heirloom tomatoes, The Extreme Bean Sweet & Savoury, Sea Salt, Virgin Olive Oil, Fresh Basil, Crostini, Fresh Parmesan

Prep Time: 5 - 7 min


1. Cut small heirloom tomatoes into quarters and add to a ­mixing bowl

2. Slice up several Extreme Beans and add to mixing bowl

3. Sprinkle coarse sea salt into mixing bowl

4. Finely chop fresh basil leafs and add to mixing bowl

5. Pour virgin olive oil into bowl so everything is lightly covered

6. Gently mix all ingredients together

Preparation: Take mixed ingredients and add to a crostini until evenly covered, grate Parmesan cheese over finished Crostini until evenly coated.
